Improving the food options at O'Hare International Airport has been a long, slow process. We first heard about improved food options at the airport (from One Off Hospitality, no less) back in 2012, but nothing seemed to happen. In the meantime, Tortas Frontera, the salvation of all traveling foodies, has moved in, but the rest of the airport is pretty bleak. No more.

But on Thursday, Crain's broke the story that The Publican, the flagship beer, pork and seafood spot from Chef Paul Kahan and One Off, is coming to O'Hare. It'll be in Terminal 3 (American Airlines) and will replace Wolfgang Puck Cafe.

No details yet about menus, but according to a statement from One Off, they'll use the same sourcing ethos and local suppliers as the main Publican outpost in Fulton Market.

The restaurant will open this Spring.
