Simple Cooking: Watermelon Coolers with Rum

Chicagoist knows a thing or two about simple partying cooking, and our Watermelon Coolers with Rum are no exception. This recipe is simple and refreshing. It is perfect for the Independence Day that we are experiencing, which is to say, it will cool you down when you are hot as balls. The amount of rum called for here is conservative. Add more if you are spending the day with your annoying family or thinking about whether to put on your American flag bikini later (we vote yes, by the way).


Chicagoist’s Watermelon Coolers with Rum

2 cups fresh seedless watermelon cubes
2 cups ice
2 shots of light or white rum (4.5 oz)
3 teaspoons lime juice
3 teaspoons sugar or honey (optional)
Mint for garnish (optional)
Watermelon slice for garnish (optional)

In a blender or large food processor, blend together the watermelon, ice, rum, and lime juice. Stop to taste (after the blades stop spinning, please). Add sugar or honey if it’s not sweet enough for you. Serve in short glasses and garnish with mint and a watermelon slice. Drink immediately. Sharing optional.
