One Great Sandwich: Goose Island Clybourn's "Stilton" Burger

We were stoked when the news broke that John Manion of Nas and Old Oak Tap was taking over as Executive Chef of Goose Island Clybourn that we made it a point to pay a visit last weekend to see what changes were happening to the menu.

That's going to take a few weeks, as Manion has only been on the job a few days. While he works to revamp the menu, Manion will be offering daily specials to whet the appetite. Selling the sizzle, you know. One menu item we hope Manion keeps is Goose Island's "Stilton" burger. This burger is simply an exercise in savory and sharp, and a must for garlic lovers. The Stilton ($9) is a half-pound of burger crusted in black pepper and grilled to order (medium rare, please). It's then served with roasted garlic cloves, English Stilton cheese and Düsseldorf mustard on pumpernickel. On a balmy Saturday afternoon, this made a perfect meal with a pint of Goose Island Clybourn's Robert Burns Scottish Ale. Try it while (or if) you still can.
