Much speculation has been made about Homaro Cantu's Disruptive Food countdown and the big reveal he's supposed to announce on November 13. Privately we've been asking ourselves and others, "Wouldn't it be a big letdown if it just turned out to be another Food Network show?" Our suspicions were further piqued by the Chicago Bites team of Tammy Green and Bridget Houlihan. They had dinner over the weekend with Ted Allen in moto's private downstairs dining room and said the room will "apparently will soon be transformed into to a TV studio for a new cooking show."

The countdown to Homaro Cantu's big reveal of his "Disruptive Food" project currently stands at 62 days. Today, however, we're gonna give you another reason to follow Cantu on Twitter. More accurately, to sign up for the messaging service yourselves.

Both Grub Street Chicago and LTHForum were abuzz yesterday by the video above featuring moto's Homaro Cantu and Ben Roche working their dark arts of the kitchen. The video shows Cantu and Roche brewing crumbled Dunkin' Donuts for cops, serving pizza-flavored photos to pizza deliverymen and making ice cream that doesn't melt at room temperature. Cantu asks in the LTH thread, "When was the last time we had a real paradigm shift in food? Get ready, because its about to happen and every top tier food company ceo is going to be scratching their heads trying to figure out what Moto has been up to with the crazy NDA's (non-disclosure agreements) and secrecy. Its almost time to let the ticking bomb go off. Tick tock tick tock tick tock..." Ellipses his.

Chef Cantu decided to show me a little microwave trick. I should mention ...that white stuff he set on fire and put in the microwave? I had just eaten some of that.
We recently spent a Saturday afternoon in the kitchen at moto. Chef Homaro Cantu set things on fire for us (video this afternoon!) while Chef Ben Roche created and destroyed a dessert for our benefit (pictures of that this week). We also captured images of a new bagel and lox menu item and how the salmon gets smoked right at your table (keep watching for those, too). Phil Vettel writes that Anthony Bourdain is filming at moto today and will be at Matchbox and Silver Palm (768-770 N. Milwaukee) from 8-10 p.m. this evening. Make us flip a coin between stalking BOURDAIN and watching "One Tree Hill" reruns. [The Stew]
The Gawker-affiliated travel site Gridskipper took a look at the local dining scene yesterday. Laura pointed out to us - and after reading the post we concur - that the tone of the post strikes the balance between "yeah, that's about right" and "this is why people in New York shouldn't write about Chicago." Seriously, they consider moto to be overrated, when we found it to be the most fun we've had in a restaurant in years. And Violet Hour is so six months ago, according to them.
To complement the raccoon post, we did some digging (well, not much, but digging was involved) and found video of Homaru Cantu and company creating the twisted roadkill plating. It exemplifies why we love dining at moto.
The Tribune would like to remind you that we live in a state where, sometimes, people hunt and eat raccoons. It's forms the basis of their story today regarding the "word-of-mouth raccoon meat market" in Illinois, Wisconsin and Missouri, and how people across the state are turning their appetites to the critters. Can't say as we blame them; raccoon is pretty tasty as a stew meat.
- Chez Pim's Menu For Hope fundraiser is still going strong (it lasts through Dec 21). So far, more than $50,000 has been raised to benefit the UN World Food Programme's school lunch program in Lesotho, Africa. Kalyn's Kitchen is the regional host for the Midwest, and there are lots of great regional prizes. Our friends over at Drive-Thru put together a yummy looking package, but what we'd really like is to win Movable Feast's offering of getting to hang out with Moto's Homaru Cantu and Ben Roche.
- We're sad to see Mas close it's doors. Chef/owner John Manion told Dish, “It’s a totally different neighborhood than what we opened to nine years ago. I’m ready to do something else. It’s my baby and I don’t have much of a security blanket but I’m looking forward to doing something new. I want to cook food again—not that I don’t at Mas—but I have different ideas [now].”
- Our love for TasteSpotting knows no bounds. A few days ago, we came across this photo, and our mouths started watering.
